Summer In A Glass

Lipton Pure Leaf Iced TEaThe weather is heating up and that calls for something cold to drink!  I drink a lot of water, but it’s nice to have something with a bit of flavor to break up the monotony.  Until recently I would have reached for a diet soda, but I’ve been trying to cut back on the artificial sweeteners.  I love lemonade but not all the calories.  What’s left?  A nice tall glass of iced tea?  Yes, please!  I usually brew my own, but there are days when I just don’t have the time.  Naturally I was thrilled at the opportunity to give Lipton Pure Leaf Iced Tea a try.

Lipton Pure Leaf Iced Tea comes in both sweetened and unsweetened varieties and several flavors.  All varieties feature all-natural ingredients and contain no preservatives.  The sweetened varieties contain no high fructose corn syrup, a big plus in my book.

You’ve heard of an Arnold Palmer, right?  Half tea, half lemonade?  Aside from those, it never occurred to me to drink tea any other way than straight up.  Now I’m looking at tea in a whole new way.  I tried this recipe for Fruit-Tea Smoothies, it was the perfect afternoon treat – so refreshing!

Fruit Tea SmoothiesFruit-Tea Smoothies

16 ounces of Pure Leaf™ Iced Tea with Lemon or Pure Leaf™
Unsweetened Iced Tea, chilled
2 cups frozen strawberries
1 cup Breyers® Fat Free Creamy Vanilla Ice Cream
1 Tbsp. sugar

In blender, process all ingredients until smooth. Serve immediately in tall glasses and garnish, if desired, with fresh strawberries.

Next on my list to try – this fresh take on the Cosmo:

Green Tea Cosmo

3 ounces of Pure Leaf™ Green Tea with Honey
1 ounce orange juice
1/2 ounce fresh lime juice
1/2 ounce cranberry juice cocktail

In shaker filled with ice, and all ingredients. Shake well, then strain into chilled Martini glass. Garnish, if desired, with lime peel.

Tip: For a special twist, substitute 1 ounce vodka for 1 ounce orange juice.

Yogurt – The Perfect Food?

Is there ever a bad time for yogurt?  It can be a part of breakfast, lunch or dinner.  You can eat it for a snack, it even makes a tasty dessert.  Yogurt is just so darn versatile!  While we’ve always loved eating it straight from the container, working with Mountain High Yoghurt over the past few months has given us an opportunity to experiment with new recipes and find new ways to love yogurt.  Here are a few of our favorite recipe ideas:

  • Smoothies – The possibilities are endless.  I’ve found so many great smoothie recipes at at the Mountain High site (including recipes for the smoothies pictured above) and on Pinterest.  Yogurt and fresh fruit make the perfect smoothie base.  You can even sneak in some spinach – getting my kids to eat the green stuff has never been so easy!
  • Parfaits – Layer yogurt, granola and berries for a scrumptious start to the day.
  • Muffins – We loved these Strawberry Banana Yogurt Muffins, can’t wait to try these Lemon Zest Muffins.
  • Pancakes – We enjoy it not only in our pancakes, but as a topping too.
  • Dips – Lightening up spinach dip with sour cream makes for a tasty snack that won’t leave you feeling guilty.
  • Marinades – Mix up a savory marinade for the meat of your choice.  Yogurt is a staple in Indian recipes.

With so many ways to use yogurt, I can’t see how we’ll ever get bored.  I keep meaning to try out one of the facial masks I saw on the Mountain High website, but we’re always running out before I get around to it.   I could really go for a facial right now, so relaxing!

McCormick Spices and Extracts

Take a peek at just about any kitchen spice rack or cupboard in America and chances are you’ll find some McCormick spices and extracts in there.   Those distinctive bottles with the red lids lined the shelf in my mom’s kitchen and I’ve got a nice collection going myself today.  I was recently introduced to the McCormick Look Book, a great place to get inspired with some new recipes this Spring.  If you’re a visual person like I am, you’ll love the layout.  So many lovely photos to tempt your taste buds to get you dashing off to the kitchen.  You can store your favorite recipes in your personal look book, or pin them to Pinterest with an easy click.  I love it!

McCormick Look Book

I had a hard time deciding which recipe to try first, but I’m a sucker for cinnamon so the Double Cinnamon Sugar Cookies were quick to catch my eye.  They were super easy to mix up with ingredients you probably already have on hand.  These were a big hit with my family, if you love cinnamon and sugar I think you’ll enjoy them too.

Double Cinnamon Sugar Cookies

Double Cinnamon Sugar Cookies
Makes 4 1/2 dozen
Prep Time: 15 minutes
Refrigerate Time: 2 hours
Cook Time: 6 to 8 minutes per batch

Ingredients:
2 3/4 cups flour
1 tablespoon plus 2 teaspoons McCormick® Cinnamon, Ground, divided
2 teaspoons McCormick® Cream of Tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups sugar, divided
1 cup (2 sticks) butter, softened
2 eggs
2 teaspoons McCormick® Pure Vanilla Extract

1. Mix flour, 2 teaspoons of the cinnamon, cream of tartar, baking soda and salt in medium bowl. Set aside. Beat 1 1/2 cups of the sugar and butter in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Refrigerate 2 hours or until firm.

2. Preheat oven to 400°F. Mix remaining 1/4 cup sugar and remaining 1 tablespoon cinnamon in small bowl. Shape dough into 1-inch balls. Roll in cinnamon sugar mixture to coat. Place 2 inches apart on baking sheets.

3. Bake 6 to 8 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.

Mountain High Yoghurt: Keeping It Simple

Mountain High YoghurtAre you a label reader?  Do you ever get label shock when you read the nutrition information for foods that you thought were healthy?  I can’t tell you how many times I’ve been surprised with what I’ve found on a label – lots of added sugars, chemical additives and plenty of hard to pronounce ingredients I’m not familiar with.  Over the past year, I’ve been making an effort to clean up our diet.  I want to know what’s in the food we’re eating.

Yogurt has been a favorite food of all three of my kids since before their first birthdays, it was love at first bite.  Until recently, I assumed that yogurt was a healthy anytime snack choice.  When I glanced at the label of the brand I’d been purchasing the most, I wasn’t thrilled.  The ingredient list was quite long, including artificial flavoring and colors.  Blueberry yogurt that doesn’t contain any blueberries?  Surely there were better options out there.  I decided to look for a new yogurt.

This is when I started buying Mountain High Yoghurt.  The ingredients list was both shorter and simpler: Cultured Pasteurized Milk, Nonfat Milk, Cream, Crystalline Fructose, Natural Vanilla, Pectin, Natural Flavors, Live, Active & Probiotic Cultures.

I was worried about how my kids would react to the change, as they had been eating the old brand for so long.  As it turned out, there were zero complaints, they loved Mountain High.  We love yogurt for many reasons, but what I love most about Mountain High Yoghurt is the simplicity.

Strawberry Banana Yogurt Muffins

Strawberry Banana Yogurt Muffins

It doesn’t any fancy preparation to enjoy yogurt, just a container and a spoon will suffice.  Yet when you venture beyond eating it by the spoonful, there are a world of possibilities.  From breakfast smoothies to dinner entrees, this versatile ingredient will earn its place in your refrigerator.  One of my favorite ways to use yogurt is as a substitute for high-fat ingredients found in baked goods.  I recently found myself with some strawberries and bananas to use up and a quick Pinterest search yielded this great low-fat, light on sugar muffin recipe.  The original recipe called for several ingredients I didn’t have on hand, so I adapted it to work with the contents of my pantry.  The result?  A tasty breakfast treat!

Strawberry Banana MuffinsStrawberry Banana Yogurt Muffins
Yield: 12 Muffins

Ingredients:
2 cups Flour
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/4 cup Brown Sugar
1 Egg
1 Cup Mountain High Vanilla Yoghurt
1 tsp Vanilla Extract
2 Large Bananas, Mashed
1 Cup Chopped Strawberries

Directions:

Preheat oven to 350 degrees, grease muffin tin or spray with nonstick spray. (I couldn’t resist using these super cute liners for this batch of muffins, but these particular muffins do tend to stick to the paper. To avoid this problem, I’d recommend not using paper liners for this recipe.)

Whisk together the flour, baking soda, baking powder and salt. Set aside.

Mix the brown sugar, egg, yoghurt, vanilla and bananas until well combined. Gradually add the dry ingredients and mix until just combined. Gently fold strawberries into the batter.

Divide batter evenly into prepared muffin tins, filling approximately 2/3 full.

Bake for 20-22 minutes or until toothpick or cake tester inserted into the middle of a muffin comes out clean.
