Full of Flavor, Free of Salt – Cooking with Mrs. Dash

Baby Spinach and Bowties

Over the past few months, we’ve been doing lots of experimenting with Mrs. Dash Seasoning Blends.   We’re finding that it isn’t difficult to make meals with plenty of flavor, minus the sodium supplied by the salt we’d been used to adding.  With 14 Mrs. Dash blends to choose from, the possibilities are endless.

The flavors include:

  • Original Blend
  • Garlic and Herb
  • Lemon Pepper
  • Fiesta Lime
  • Tomato Basil Garlic
  • Chicken Grilling Blend
  • Hamburger Grilling Blend
  • Steak Grilling Blend
  • Southwest Chipotle
  • Italian Medley
  • Caribbean Citrus
  • Table Blend
  • Onion & Herb
  • Extra Spicy

So far I’d say our favorites have been the Lemon Pepper (good on veggies and chicken) and the Southwest Chipotle (love this to add a kick to a quesadilla).  With warmer weather on the horizon, I’m looking forward to getting the grill fired up to test out the grilling blends.  There are also plenty of recipes on the Mrs. Dash website you can use for inspiration on how to use the blends.  Last week we tried the Baby Spinach and Bowties, it was a refreshing change of pace from the same old pasta and marinara sauce we usually eat.  Two out of my three kids loved it, which is a success in my book.

Baby Spinach and Bowties

12 ounces bow tie pasta
2 Tbsp. olive oil
2 cloves garlic, minced
2 cups chopped tomato
2 sun-dried tomatoes, minced
6 cups baby spinach (one 6 oz. bag)
2 Tbsp. freshly squeezed lemon juice
6 tablespoons sliced Kalamata or black olives (about 6 olives)
1 1/2 teaspoons Mrs. Dash® Lemon Pepper Seasoning Blend
2 Tbsp. shredded parmesan cheese
1. Cook pasta according to the package directions. Before draining, remove approximately 1/2 cup of the pasta cooking water and reserve. Drain the pasta and return to the pot and toss with 1 tablespoon of the oil. Cover to keep warm.
2. In a large non-stick skillet, sprayed with cooking spray, heat the remaining oil over medium heat. Add the garlic and cook until the garlic softens, being careful not to burn, about 3–5 minutes. Add the fresh and sun-dried tomatoes and cook for another 4–5 minutes until the tomatoes start to soften. Add the spinach and cook, tossing until the leaves are wilted. Stir in lemon juice, olives, and Mrs. Dash seasoning.
3. Reduce heat to low and cook for another 2-3 minutes to combine flavors.
4. Add the tomato mixture to the pasta and toss to coat, adding some of the reserved pasta water, if necessary.
5. Sprinkle with the parmesan cheese and serve.

Cauliflower Popcorn

I was really intrigued by this Cauliflower Popcorn.  I’ve never been a big fan of cauliflower, but the reviews on the recipe convinced me to test it out.  Sadly, mine came out looking nothing like the photo, most pieces were overcooked to the point of charring.  But the pieces that were salvageable were quite tasty so I think I’ll give it another go one of these days.
